I LOVE Proof. I frequent the location on 32nd & Shea, and has a gluten free person (not celiac though!) I can’t get enough of their sourdough breads and sourdough croissants, it truly feels like I can eat REAL bread again, and my stomach actually somehow feels better afterwards (lots of probiotics in fresh sourdough). They’re my absolute favorite bakery, and they’re always putting out fun new croissants, focaccia pizza and I buy a ham + cheese croissant every single time I go in the morning, they’re to die for. Check them out!!!!

We love our tradition of heading to proof on weekends. Friendly staff, low gluten pastries for my gluten intolerant spouse, and a fun environment for our toddler. Jury is out on whether he likes the morning bun, or the ikea kitchen more!
