Proximo

In general it was very good. However, the gluten free bread was very most likely first microwaved, and then finished on the grill. It tasted like styrofoam, and half of it could not even be eaten. I would highly suggest to the cooks to simply leave it out at room temperature for 10 minutes before grilling (assuming it was previously frozen). Bread only does this when microwaved. If it wasn't for that, I would have been very happy. The service was fairly good.

5 of us had the best brunch at Proximo for one of my good friend’s birthday. We started with 1 blueberry lemon pancake to share. It was delicious. Not too sweet with great balance of lemon and blueberry. We had 2 traditional breakfasts, one with gluten free bread. I had the salmon Benedict. The poached egg was cooked perfectly and overall the meal was delicious. The carnitas benedict was delicious and definitely enough to share. The last meal was the breakfast tacos. You can order 3 different proteins if you prefer. The chorizo was amazing, arguably the best in Fort Wayne. Don’t forget the chocolate cake. We added dulce de leche and black lava sea salt. It was the perfect dessert. While the food was amazing, I must say the star of our brunch was our server, Jared. He was absolutely amazing. He was prompt, attentive, and entertaining. He’s one of the best and has set the bar high for all other servers to follow.

I’m a big fan of Proximo, especially after working with them to host my wedding reception in their private dining room. They were very accommodating, the food was stellar as always (with great vegetarian and gluten free options to accommodate all guests), and the cocktails and wine were perfect. Thank you Proximo!
