Summit Tacos

Great seating outside and a few tables inside too. Great food! Hibiscus ice tea was great... deep flavors and not too sweet. Good crispy chips. Kids quesadilla for $5 was large and tasty. Queso fundido (more like queso) was good and had a spicy guajillo chili oil on top. I had 4 taco combo plate. Cactus, poblano and onion, chicken, and Barbacoa. ALL good... with pickled veggies on the plate. Rice and beans were both good. Both vegetarian and gluten free good options here!

Summit Tacos is AMAZING. They catered the welcome/rehearsal dinner for my wedding in Estes Park and everything was perfect. Everyone who works here is super friendly. April was very responsive and helped to setup the menu and details. Guests raved about the food and we were happy to eat the leftovers the next week. Many of the sides are vegan and dishes naturally gluten free which made it easy to deal with dietary restrictions for the event. My parents drive up to Longmont now just to get tacos and margs here. Can’t recommend enough.
