I found this place on the Find me Gluten Free app and it is a paradise for celiacs.
They use only corn flour and everything is suitable (with the exception of a meat that has black sauce).
One of the few times I have been able to eat in a traditional, non-touristy place, without worrying.

We stopped here at the recommendation of our tour guide. Staff doesn't really speak English, but they understood my gluten free request and assured me the tacos are safe for a coeliac.
The tacos are "just" good. Lots of filling, but the tortillas weren't great. Al pastor and the one with the Valladolid sauce were my favorite.
If you want to eat like a local, this is the place for you.
