Ums no Hana is always popular because there are Vietnamese, Japanese and Thai dishes. There is a whole section on the menu for vegetarian and vegan dishes. All Pho dishes are very good!
I can especially speak up for gluten-free options here! I find it a bit cramped inside but outside it is beautiful in summer and winter.

I had dinner here with a few people for my birthday. All dishes were very tasty. One friend is vegan and another cannot tolerate gluten and both were also very satisfied. The service was also very nice. The only problem was that you can't pay by card. So a little tip, if you want to invite your friends over for dinner, bring enough cash with you 😉
