The concept is a good idea.
Being able to choose what we want to eat: being able to choose and combine as recommended: Carbohydrates, vegetables and protein. (All vegan) with gluten-free possibility.
The food is very delicious.
What I didn't like is: the lack of price transparency. For those of us who are not from there, don't let them tell you that the bread (3 dry slices costs €4.5) and the cutlery costs €2 per person (I found out that it is like that in Italy but they don't tell you nor can it be clearly seen.
The quantities were ridiculously small, I left there hungry and paid 36 euros for 2 dishes (we were 2 people), a drink and dry bread from the day before.
They give you a plate that already has a compartment and each one fits very little.
I found the lady at the bar unfriendly but that's my opinion.
In my personal opinion, this place is for people who don't eat much and have extra money.
I don't mind paying if the food fills me up. But leave there hungry because the portions are ridiculous, NO Thanks!!!

Replying to your message: I charge €4.5 for dry day-old sourdough bread!!! I'm sorry to tell you that I'm not lying, if you were wrong at your convenience, that's something else!!! I don't understand how you serve hummus with a 2 by 2 cm piece of bread and pretend that it can be eaten like that. I charged €2 for the cover (€4 in total). €11 each dish = €22, €4.5 for disgusting dry bread, total drink 4.5. Total €35 that I paid.
