Our waitress said, "We do not do well with gluten-free," and thought the carpaccio plate might have hidden gluten. I am glad she was cautious and understood the risks! I gave her a printed card from celiactravel.com to take to the kitchen to ask, and she came back with good news. The chef brought out the carpaccio with a separate dish of frites that he explained were not GF, so I let others in my party eat them.
