They have gluten free soy sauce and they can understand your request for gluten free.
However, you need to check with the chef the food when it comes to your table to guarantee there is no gluten by mistake.

We enjoyed so much eating here! It's a very tiny restaurant, the atmosphere is really cozy. The waiter was extremely kind, he knows English and Italian too. Food was really good and fresh. I am celiac and they are well aware of this medical condition and provided me with gluten free soy sauce and warned me about food that I couldn't eat. Amazing experience!
