I have been gluten intolerant for 3 years now.
3 years of making do with buckwheat crackers (you all know what I mean) and from time to time a 100% einkorn bread but it was all very bland... And I'm not even talking about the pastries that I had been completely banned from my life! But that was before meeting the friend of bread: since then I can regularly eat 100% einkorn bread (flour + sourdough + flowering) and pastries!!! Yes !!!! These artisans prove to us that we can make croissants, raisin breads, etc. 100% einkorn!!! And what a treat! The bread has a real taste identity, I can recognize it with my eyes closed. There you go, I wanted to pay tribute to this bakery which has put stars back in my taste life ;-) I buy my supplies most often at the Wednesday afternoon market in Jassans and from time to time at the shop/hut in Blacé.
