Rootstalk Breckenridge

We had the best experience we could have asked for at Rootstalk. We went to celebrate our engagement the night I proposed and the whole team went above and beyond to make the night special. After making the reservation I worked with Liz to plan the big surprise dinner. She was very helpful and made sure the whole staff was aware of our big news and that we had the best seat in the house. The dinner was incredible!! From the moment we walked in we were swept off our feet with congratulations and excitement. Teddy came and personally congratulated us and provided a toast for our occasion. I might have remembered more names if our heads weren’t spinning from the excitement and attention the staff was giving us. The service was top notch. The tasting menu was stellar and so were the wine pairings. From the smoked sturgeon amuse-bouche to the sorbet with a special note for us, the entire meal only elevated the night. The chef and their team tailored the whole menu to accommodate a gluten intolerant diet and didn’t miss a beat. The roasted squash with black sesame tahini was particularly scrumptious (her words). As if all that weren’t enough Liz and the team at Rootstalk came through again when we emailed the next day to find out details about the toasting bubbles and meal that we wanted to remember. I’m so happy I chose to celebrate our engagement at Rootstalk and they will be a highlight from one of the most special nights of our lives. Thank you Rootstalk team!
