Unfortunately this restaurant contaminates all its deep fryers with Halloumi cheese (they deep fry it, even in the fryer reserved for Gluten Free food) which means anyone with a dairy allergy or dairy intolerance cannot eat their fish and chips without becoming ill. We don't usually go out for fast food as I do a pretty mean burger with dirty onions and my daddy fried chicken is banging if I do say so myself. However the Mrs won £100 from social media to spend so we popped in on a Wednesday evening. 1 x Veggie adult 1 x Gluten free adult and 1 x "normal" 9 year old.
Service was great, the two people serving were very helpful and super nice. All our dietary requirements were more than catered for and the menu was explained in detail. We had gluten free double caws burger, veg caws burger, hot honey crisp chicken burger, Parmesan and truffle fries, cajun fries and cawboy fries, gluten free buffalo tenders, plus two strawberry milkshakes, and a water. food came out in a timely manner given it's all fresh. Everything was really tasty, the smashed burgers had a decent crust and were lovely, honey chicken was huge with decent coating, gluten free tenders were crispy on the outside and juicy in the middle. Truffle and Parmesan chips were stand out. Everything would have come to just over £70.00 my old man head says that seems a lot but looking at the other burger places around it's competitive, and for us it was free anyway! Two suggestions 1) All gluten free rolls and poo full stop, I've not found one yet unless homemade that's any good. Maybe have a look at the Tesco gluten free tiger bread cut thick and toasted to replace as a sandwich style burger, I've started doing that at home and it works. 2) Get an auto close thing on the door as people in Hitchin seem to be born in a barn.
Lovely dinner, well done Caws team...I may well be back on my own to snaffle the remaining prize.

The staff had a separate menu for gluten free. Furthermore, I knew each detail as they bring over a tablet/iPad to show me the allergens in the order before I place it. I did believe one of the orders was not as value for money as we'd hoped due to it being a smaller portion than envisioned. The other items we ordered- sharing nachos with pulled pork was a good portion and flavoured well and a gluten free burger with the extras was a good portion and a good bun (for GF).
The atmosphere was enjoyable, somewhat American themed, some good music, friendly atmosphere and pleasant staff! No issue there. Just up to your preference. Very easy to book online, on the day. Alternatively you can call the restaurant.

I had picked our hotel in Liverpool for a long weekend break partly due to it's proximity to the Free State Kitchen and it's rave reviews. So relieved it did not disappoint.
Had the double French Onion burger which was the best burger I've had in my life (with some tough competition in the US and Spain), which is extra difficult these days as I developed Coeliac disease in the last few years. My wife had the Macaroni Cheese which was good, but also the Chocolate Brownie which was (also) the best she's ever had.
So fantastic and refreshing to see food that is so often underrated in the UK as cheap fast food staples be prepared with fantastic ingredients by people who really care about what they are doing. Service was great as well.
When we're next back in Liverpool, this is now a mandatory stopover for us!
