After the acquisition of the business to the new owner, things have continued to slide downhill. This place used to be my favorite however the new owner also does not have celiac and is not aware of the quality required to run this bakery correctly. They've been continually chopping the quality of ingredients and no longer use purity protocol oats as I've gotten sick several times now from them. Additionally, they have an Okay rating in terms of health and food safety after having some incidents.
Honestly one of the better gluten free pizzas i’ve had (though admittedly the bar is low), but expect to pay $40 for a 12 inch / Medium… which is really a small. Also, I know gluten free crust is expensive.. but why must it always be a centimeter thick?? My rating is tragically low because of the crust, because while it is not bad, I only order pizza when I want calories. When I want to be full and still have seconds left over. That cannot happen when the crust is non-existent.

TDLR; Very grateful that Palermo is willing to cater to those with gluten and dairy allergies, but i’m begging for someone to stand up for the celiacs and give us a PIZZA, not a $40-$50 chip with sprinkles. 🥲
Great gluten free panini! The owner was wonderful to talk to, wish I lived closer so I could come everyday! Great food, great people, what more do you need?
