After a long time I returned to eat a gluten-free pizza, and I must say that the experience offered by I Dissonanti went far beyond my expectations. Although I am not celiac, I have a slight intolerance to gluten and refined flours, and I am used to alternative doughs that often turn out dry, crumbly or too compact. Here, however, I found what I can define without hesitation as the best gluten-free pizza I have ever eaten.
The dough is surprisingly soft, well leavened and with a pleasantly elastic consistency, which holds the toppings perfectly without "going mushy". The cooking is impeccable, with the right balance between crunchiness and softness. The choice of ingredients is also of the highest quality, from tomatoes to mozzarella, through cold cuts and very fresh vegetables.
Another very appreciable aspect is the wide selection of gluten-free beers, which is far from obvious, alongside non-alcoholic beers and the classic traditional options. An attention that demonstrates a concrete sensitivity towards those with particular dietary needs, without making them feel "different".
The place is well-kept, welcoming and the service is attentive, courteous and well-informed about gluten-free options, an element that always makes the difference when dealing with food intolerances or sensitivities.
I highly recommend I Dissonanti not only to those who follow a gluten-free diet, but also to those who are simply curious to discover an alternative dough made with skill and passion. A virtuous example of how inclusive cuisine can also be extremely tasty.
Welcoming place and kind and prepared staff, pizzas with excellent dough, gluten-free alternatives in complete safety, more than honest price, we will definitely be back.

A very good selection of delicious food and drinks. They are well-prepared for guests requiring gluten-free dishes. The service was a bit inattentive. The ambiance is modern and well-maintained. Relatively high prices, which is noticeable due to the proximity to Maranello 😄
I am celiac, I call to order a gluten-free pizza and ask to take it home.
After 15 minutes the pizza still hasn't arrived, I call the pizzeria and their response was "we are on the way" after 40 MINUTES the pizza still hasn't arrived, I call back and their response was "sorry but we are on the way" what's more while I speak and answer they choose to hang up the phone making fun of me.
I have already ordered pizza there other times and it is always dry, rubbery and hard to digest, but since I am celiac I make do with it.
Rude, incompetent and not very serious people.

We went today with my celiac wife and son. Excellent pizza and great assortment also in the types of dough, very kind staff. The gluten-free pizza is also very good (and safe). Price more than fair. Beautiful discovery.
Good food and a very friendly waiter. We don't speak Italian, so the waiter who speaks English helped and advised us.
And good if you need glutenfree pizza.

Pizzeria with a lot of outdoor space and also a great indoor space. Super friendly staff, very organized and quick in bringing the pizzas.
Gluten-free pizza, margherita with buffalo mozzarella, fantastic!!! My partner confirmed that both mine and his traditional one were excellent (whole wheat dough, cooked ham and porcini mushrooms): quality ingredients, delicious dough and... even the spicy oil was really good!
My partner, at the end of the dinner, had a panna cotta with strawberry topping and said it was very good!
Finally, honest and fair price for 2 stuffed pizzas (one of which was sg), a 1.5 liter bottle of Pepsi and one of water, a dessert and 2 coffees: €34 total.
The gluten-free pizza was a rock, arrived after 40 minutes. My pizza arrived after more than an hour. I basically watched my partner eat, dead of hunger, and she looked at me when she had already digested.
I understand the mess or that there were a lot of people. But there are ways and ways of dealing with guests. In fact, a waitress looked at us badly, she was not very willing, and especially not very polite ... not even an "excuse me". Terrible service. Not cared for. Zero communication. And I repeat that pizza was a ROCK, freshly shoveled concrete. Greetings.
Very nice service, we got our pizzas within 5 minutes. Huge selection, probably the best pizza in Maranello. There is a gluten-free option, also excellent. We will be back.

I was attracted because various reviews said that there is gluten free pizza. There is gluten-free, but only in the shop, they don't serve it on site.
However, I ate an excellent salad, some tasty chips, a little sad at first sight, but then I changed my mind.
