It breaks my heart to give 3 stars to this place which in our family we have always considered a point of reference, especially for gluten-free.
This evening, during the Soave Carbonara Festival, the turnout of customers was extraordinarily high. Despite booking in advance and the service shift system, many people (the four of us first and foremost) remained waiting well beyond the start time of the second shift (9:00 pm) due to the place being fully booked. Since it was approaching 10pm we decided to go home without eating.
Frankly, I think this situation is unacceptable for a place where the food, environment and service have always been very positive.

Good experience in this pizza by the slice, where we ended up one evening exhausted from hunger...
Parking is not very convenient, I went around the block three times to find it, immediately at the entrance there is a counter with all the pizzas available and the staff was kind and courteous in explaining all the flavours.
Fast service and very kind staff, that evening there were many free tables to stop and eat, clean bathrooms.
Gluten-free pizza in an aluminum pan (costs €14 and can be filled with a maximum of two flavours) of good quality, light and tasty; they also told me the normal pizza was good.
Average prices, the gluten-free one a little expensive.

My celiac wife was able to enjoy a pizza that she said was very good too with a pronounced crust (which is very difficult for gluten-free people).

Light pizza (with gluten), crumbly crust because in my opinion it rises a lot and therefore becomes super digestible.
Tagliatelle with mushrooms are very good, the medallions with vegetables as a second course are an excellent alternative for those who have already eaten too much meat at home during the week, and the mushroom aubergines together with the sautéed courgettes are a delight!
Here they make gluten-free pizzas, but it is a tall, soft square slice that is completely different from the round and crunchy ones with gluten. Who likes it, unfortunately I didn't like it.
Unfortunately there is no gluten-free pasta (legume or corn or rice or mixed flour), and for the risotto they invite you to wait at least half an hour because they make it on the spot.

A vast selection of doughs, I tried the hemp one, crunchy and soft, not heavy at all, it left my stomach very light (in terms of digestion); very clean pizza, with almost non-existent charred particles. Very good tomato.
I don't even feel like I waited long. You certainly notice a lot of effort, I imagine the work and the full cold room, to be able to offer such a vast choice. I also appreciated that the burrata was placed whole in the middle of the pizza. As far as I understand, by booking, it is possible to ask for gluten-free dough. Personally I was also satisfied with the service.

We had a person with gluten and lactose intolerance, so it was really difficult to find a place where to find pasta to eat. We called the restaurant and the owner treated us really good. When we arrived, she recognized us and guided us with all the food without gluten and lactose. Besides, she gave us non-gluten bread.
